Corinne at Plaza San Antonio Hotel & Spa Debuts Its First Easter Brunch

As the vibrant San Antonio community gears up for Easter, the Plaza San Antonio Hotel & Spa is thrilled to announce its inaugural Easter Brunch at Corinne, promising a delightful culinary experience amidst a challenging construction backdrop on South Alamo Street.

Looking Ahead: Anticipating a High Turnout

Assistant General Manager Aaron Hjermstad expresses optimism about the brunch attendance despite the ongoing construction, stating, “We expect a big crowd. We have about 200 covers (people) on the books right now and expect to be closer to 300 on Sunday.” This expectation is bolstered by a steady influx of reservations, with Hjermstad noting an addition of 30 to 40 covers daily.

Local Enthusiasm and Previous Success

Executive Chef Richard Marcelo, who is excited about the response to the brunch, estimates that nearly 90% of the reservations are held by local patrons. His confidence is further supported by the success of previous events, such as Valentine’s Day, during which Corinne hosted 390 guests, half of whom were local diners.

A Culinary Experience Like No Other

What has attracted these guests? Marcelo emphasizes the restaurant’s commitment to quality, stating, “Our food is fresh and carefully sourced. Everything on our menu, from our salsas to our biscuits and churro waffles, is made in-house.”

Brunch Features

  • A diverse buffet featuring:
    • A carving station with smoked turkey and ham
    • Crepe and omelet stations
    • Shrimp cocktail and baked pastries
    • An enticing mimosa and juice bar

To enhance the family-friendly atmosphere, an Easter Bunny will be present for photos with children, and an outside Easter egg hunt is planned, contingent on the weather.

The Vision Behind Corinne

Corinne opened its doors in January 2024, offering dishes inspired by the flavors of South Texas and the Gulf Coast within the recently renovated hotel. Marcelo, who was raised in Los Angeles, possesses a diverse culinary background shaped by both formal training at the now-closed Le Cordon Bleu and hands-on experience in various kitchens.

Resilience in the Face of Challenges

A seasoned chef, Marcelo brings years of experience to Corinne, having previously worked at the Hyatt Regency Hill Country Resort and Spa before transitioning to the kitchen from a front-of-house role. His journey included overcoming hurdles during the pandemic, where he temporarily operated a food truck to maintain his passion for cooking.

An Engaging Brunch Experience

Marcelo describes the Easter Brunch as an “elevated version” of their Sunday offerings, mentioning, “It’s going to be fun for our cooks as well as our guests at the stations. It will be interactive.” Guests will have the opportunity to customize their meals, selecting ingredients for crepes and choosing the preparation of their eggs.

Event Details

The Easter Brunch will take place from 10 a.m. to 3 p.m., with pricing set at $65 for adults and $17 for children aged 10 and under. Despite the construction challenges, Marcelo remains confident about the turnout, referencing successful events in previous months.
